According to the lore revealed in LKH's Anita Blake, Vampire Hunter books:

Three Bites

Usually, for a corpse to raise as a vampire, there has to be one - and only one - vampire feeding over the space of several days. Three bites is all it takes, the third ending in the victim's death, to make a vampire. "It has to be three bites within a very short space of time or the body fights off the infection, or whatever the hell it is." (TGWWIWD) Three nights after the death (including the night of the actual death) the corpse raises as a vampire. The corpse of a vampire-to-be looks like a normal dead body until full dark falls on that last night. As night approaches, the body begins to look more like a sleeper than a corpse, the flesh becoming soft to the touch and the body may actually move a little. The skin shimmers as if it is bathed in moonlight, close to glowing. (tLaC?CotD)

Sometimes, if the vampire is powerful enough, one bite is enough to bring a person over and even more rarely, a very powerful vampire master only needs to touch a corpse to turn it into a vampire. (reference point?)

If the victim was bitten by more than one vampire, they will either not raise, or come back as an animalistic vampire, also known as a revenant, with little or no cognitive ability and with extreme strength and resistance to pain. They will slaughter everything in its path unless it is killed or a powerful master vampire controls and stops it. (ID)

Biting
waiting to rise
They are like PCP addicts, unable to feel pain, they only feel the thirst, the need to drink. Because of this, not even holy symbols stop them, and they can keep attacking even with no head or heart. They only die when both are destroyed. They are too rare to have a colloquial term.

The corpses of vampire victims are sent to special morgues, equipped to handle freshly risen vampires. The room where they are kept in needs to be heavily steel enforced, and they usually have crosses laid on the doors, and sometimes they even have feeding tanks with rats, rabbits and guinea pigs to take the edge off their blood lust.

There is also a vampire counselor who waits with the corpses, to talk to and reassure the newly risen. These vampires have only been in place for a little over a month before CotD.

There are a number of people with 'Living Wills' that indicate that they are to be staked if they die as a result of a vampire bite. These people have indicated that they do not want to rise as vampires. (CotD) more on this ...
Living Will

Generally, a vampire will not drain a human more than three times a month. This allows the human to remain healthy.

Lycanthropes can be fed on more frequently as their ability to heal is much greater. Their blood also seems to be more sustaining to the vampires, and they are often preferred as blood donors for this reason.

In modern times, it is impossible for a lycanthrope to contract vampirism (or a vampire to contract lycanthropy). In pre-historic times the vampiric blood was weaker than it is now so human beings could be infected with vampirism and lycanthropy simultaneously, resulting in incredibly powerful hybrids. The Mother of Darkness seems to be the oldest and most powerful example of such a hybrid. Others include her "children" (NiC) and certain members of "The Harlequin" (TH).

I do think this info in most interesting yet!!I do not think all is true. Humans and drink the blood of a vampire and become one. It doesnt have to take three days. Also if a vampire is strong enogh and drinks enogh of HUMAN blood they will be able to turn into two and only two animals. They are telepathic and the eviler, more powerful they are,the less they can cross water.
